Jerk Tempeh + Mango Salsa

Ingredients
  

Main Bowl
  • 1 cup Couscous or quinoa for GF
  • 2 cups Cabbage chopped
  • 2 cups Spinach loosely packed
  • 1 block Henry's Tempeh: Original Soy about 200g, cut into cubes
  • 1–2 tbsp Oil for roasting
Sour Cream Drizzle
  • 1/2 block Silken tofu about 175g
  • tbsp Lemon juice
  • 1 tbsp Apple cider vinegar: 1
  • 1 clove Garlic fresh or paste: or ½ tsp paste
  • 1/2 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1 tbsp Oil
  • 1–2 tbsp Cilantro finely chopped
Mango Salsa
  • 1 Mango diced
  • 2 Tomatoes diced
  • 1/4 Onion red or white, finely diced
  • 1 tbsp Lime juice: 1 tbsp
Jerk Sauce
  • 2 Tamari or soy sauce: 2 tbsp
  • 1 tbsp Jerk seasoning
  • 1 tsp Brown sugar
  • 1 tbsp Lime juice
  • ¼ cup Pumpkin seeds optional topping
  • 1/4 tsp Garlic powder
  • 1/4 tsp Onion powder
  • 1/4 tsp Paprika
  • 1/4 tsp Chili powder

Method
 

  1. Preheat your oven to 375°F.
  2. For couscous: Bring at least 1 cup of water to a boil. Combine the couscous and 1 cup of boiling water in a bowl, cover, and let sit for 10 minutes. Fluff with a fork.
  3. For GF option: Bring 1 cup of water and quinoa to a boil. Reduce to a simmer, cover, and cook for 11 minutes.
  4. Give your vegetables a quick wash where needed, and cut them as shown below.
  5. Toss the cubed tempeh and cabbage with a splash of oil, then spread them on a lined baking sheet. Bake for about 17 minutes, stirring 3/4 of the way through, until evenly browned on the edges.
  6. When your vegetables and tempeh have about 5 minutes left in the oven, heat a large pan over medium-high heat. Add your jerk marinade and bring it to a gentle bubble. Once the roasted tempeh and vegetables are finished cooking, transfer the tempeh to the pan. Cook for an additional 5 minutes, stirring occasionally, until the sauce coats evenly.
  7. Start with a base of couscous at the bottom of your bowl. Add layers of jerk tempeh, roasted cabbage, fresh spinach, and mango salsa. Finish with a drizzle of sour cream and a sprinkle of pumpkin seeds for the perfect touch.
