In a large cast iron pan, heat over medium heat, add the olive oil and warm.
Preheat your oven to 425F.
Add the shallots, carrots and celery and cook with a pinch of salt for 5 minutes. Add the tempeh, kitchen and soy sauce and mix combine.
Add the spices, mix and continue to cook for 5 minutes. Stirring occasionally.
Add the corn and cream cheese, mix to combine. Cook for a few more minutes. Add the water and flatten everything with the back of spoon. Remove from heat, place the tater tots on top and bake in a pre heated oven for 30-40 minutes, until the tater tots are golden on top.
Top with chives and dig in!
