Holiday Tater Tots Tempeh Casserole

Ingredients
  

  • 2 tbsp olive oil
  • 1 shallot diced
  • 2 carrots peeled and diced
  • 4 celery stalks diced
  • 1 brick Henry's Original Tempeh diced
  • 2 tbsp ketchup
  • 2 tbsp soy sauce
  • 1 tsp thyme
  • 1 tsp chili flakes
  • 1 tsp rosemary
  • 2 tbsp fresh sage
  • 2 cups frozen corn
  • 1/2 brick vegan cream cheese
  • 1 cup of water
  • Enough tater tots to cover
  • Chives for garnish

Method
 

  1. In a large cast iron pan, heat over medium heat, add the olive oil and warm.
  2. Preheat your oven to 425F.
  3. Add the shallots, carrots and celery and cook with a pinch of salt for 5 minutes. Add the tempeh, kitchen and soy sauce and mix combine.
  4. Add the spices, mix and continue to cook for 5 minutes. Stirring occasionally.
  5. Add the corn and cream cheese, mix to combine. Cook for a few more minutes. Add the water and flatten everything with the back of spoon. Remove from heat, place the tater tots on top and bake in a pre heated oven for 30-40 minutes, until the tater tots are golden on top.
  6. Top with chives and dig in!
