Tempeh Chopped Cheeze Sandwich

Born in the late 1990’s in the bustling bodegas and corner delis, the Chopped Cheese was created out of necessity for a quick, hearty meal and quickly became a favourite among locals. Now, we've given it a nutritious makeover with Henry's Tempeh! Our Tempeh Chopped Cheeze Sandwich combines Henry's Tempeh Seasoned Crumble with melty cheddar and fresh veggies for a deliciously satisfying meal. Check out the recipe below and give it a try! Ingredients
- 2 tbsp olive oil
- 1 brick of Henry's Tempeh Seasoned Crumble
- 2 tsp tamari sub for soy sauce if you have no issues with gluten!
- 1/2 onion finely diced
- 4 garlic cloves sliced thinly
- 2 slices of your favourite cheddar cheese slices (we recommend Daiya Foods)
- 2 sub rolls sliced lengthwise (wheat, or GF)
- Shredded iceberg lettuce
- 1 tomato sliced thinly
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup mayo (we recommend Follow Your Heart vegenaise)
Instructions
- Heat a large pan over medium heat and add 1 tbsp of olive oil. Heat for 20 seconds and add your crumbled tempeh. Cook for 5 minutes until the tempeh is slightly golden brown.
- Add tamari, onions and garlic to the pan. Stir to combine. Cook for another 5 minutes until golden brown all over.
- Form the tempeh mixture into a log shape and place the cheese on top. Add a splash of water to the pan and cover with a lid to steam and melt the cheese.
- Prep the sandwich by adding 1 tbsp of mayo to the sub roll. Carefully scoop out the cheesy tempeh mixture into the sub roll and top with iceberg lettuce and tomatoes. Season the tomatoes with a pinch of salt and pepper. Slice in half and dig in! ????
